I am always looking for delicious desserts for Shabbos and these are often on the menu. I have
no doubt they will become part of your Shabbos repertoire as well!

3 eggs
1 teaspoon of vanilla essence
2 cups of self-raising flour
2 cups of choc chips*
2 cups of almonds*
¾ cup of castor sugar
*You can make various flavours and substitute the almonds and choc chips with :2 cups of cranberries and 2 cups of shelled pistachios
2 cups of white choc chips and 2 cups of macadamia nuts
2 cups of dried apricots and 2 cups of almonds
  1. Beat sugar and eggs until thick and pale. Add vanilla, add self-raising flour and then stir in the choc chips and almonds.
  2. Shape into 2 loaves and place on a lined baking tray. Bake on 180°c for 20 to 30 minutes.
  3. Remove from the oven and allow to cool completely.
  4. Slice into thin biscuits and place them flat on a baking tray and bake on 110° c allowing them to dry out for about an hour.
