Healthy Chicken Salad

My family absolutely adores salads! And I find by adding a protein, such as chicken, you really do have a meal in a bowl.


1 roast chicken shredded
1 to 2 packages of Romaine lettuce shredded
1 cup of shredded purple and green cabbage
3 mielies boiled then chargrilled on your griddle pan and sliced off the cob. (If you don’t want to chargrill just boil them)
1 cup of olives with the pip removed and cut in half
1 cucumber, two tomatoes and ½ a red onion diced and mixed together
2 avos thinly sliced
1 cup of mayonnaise
½ cup tomato sauce
Juice of half a lemon
A few grinds of salt and pepper

    Start Cooking

  1. Mix together
  2. Place your lettuce and cabbage at the bottom of the serving platter.
  3. Arrange the rest of the ingredients in separate sections on top of the lettuce and cabbage.
  4. Drizzle over the dressing.
